The juice was received from Showalter's and racked directly to a tank for cold settling over a period two days then racked to clean tank. Slow fermentation at cool temperatures to maintain and enhance aromatics occurred. Post fermentation wine remained in tank for 4 months until stabilization and bottling in
June 2024
